Paleo Cookie Crisp Cereal
Ingredients:
1 c almond flour
1 c coconut flour
1 tsp baking powder
Pinch of salt
1 egg
1 tbsp apple cider vinegar
1 tsp vanilla extract
1/2 tsp almond extract
1 tbsp melted coconut oil or butter
1/4 c Lilyβs Stevia Sweetened Chocolate Chips
1/8 c raw honey
1/8 c Monk Fruit Sweetened Maple Syrup( if you prefer, use all raw honey, but it adds more sugar)
Directions:
Mix all dry ingredients. Add all remaining ingredients, except chocolate chips. Stir until a crumbly batter forms. Fold in chocolate chips.
Form into tiny, bit size balls-this takes awhile!
Bake at 325 for 15 minutes, or until cookies begin to brown.
Cool completely before eating. Serve with coconut or almond milk. Makes 4 servings
